- ½ cup diced onion
- 1 stalk celery, diced
- 1 ½ cups roughly chopped asparagus
- 1 medium zucchini, cut into half moons
- 1 cup peas
- 1 cup cooked shredded chicken
- 2 cloves garlic, minced
- 1 ½ teaspoons oregano
- ½ teaspoon thyme
- 2 ½ cups chicken stock
- ½ cup lemon juice
- Salt and pepper, to taste
- Optional toppings: avocado, freshly chopped parsley, lemon juice, red pepper flakes….
