Ingredients
- 4 cups packed fresh Basil
- 3 – 4 Garlic Cloves
- 1/4 cup Walnuts or Pine Nuts
- 1 tsp Salt
- 1/4 cup shredded Parmesan
- 1/4 cup shredded Pecorino
- 1/2 cup Olive Oil
Instructions
- Pulse basil, garlic, nuts, and salt in a food processor until finely diced, about 10 pulses. (If a food processor is not available, grind all ingredients in a mortar or finely mince by hand.) Place mixture in a fresh bowl.
- Stir in shredded cheeses then add olive oil and gently mix until uniform. Serve immediately or store chilled with plastic wrap pressed securely on the surface to help retain color.
