    Eggplant Fries

    Enjoy a spin on the traditional fry with eggplant for the perfect combination of crisp and flavor.

    Ingredients

    • 1 medium fresh eggplant globe, ¼-½ inch fries
    • 3 tbsp olive oil
    • ½ tsp kosher salt
    • 1 ¼ cups panko breadcrumbs
    • 1 tbsp spice za'atar
    • 1 pinch kosher salt

    Instructions

    • 1. Prepare eggplant by cutting into ¼ - ½ inch fries, then drizzle with olive oil. Toss to coat.
    • 2. Add dry ingredients to a large bowl & mix well.
    • 3. Combine eggplant & panko mixture coating all sides.
    • 4. Cook at 400°F for 14 minutes stirring the basket halfway through.
    • 5. Sprinkle with salt while hot to taste.
    • 6. It's fry-day. Dip & enjoy!
    • Tip: For best results, work in 2 batches. The second batch may cook quicker than the first batch since the Airfryer is preheated!
    • This recipe was created using the Philips Airfryer XXL (HD9630). If making in another version of the Philips Airfryer, use half of the ingredients or cook multiple batches.

    Ingredients:

    1 cup Regular Mayonnaise

    1½ tbsp Fresh Tarragon, leaves removed, minced

    1½ tsp Chili Powder

     

    Directions:

    Combine ingredients in a medium bowl & mix well.

    Creamy Horseradish Dip

     

    Ingredients:

    1½ cups Sour Cream

    2½ tbsp Prepared Horseradish

    1 whole Fresh Lemon

    ½ tsp Kosher Salt

     

    Directions:

    Combine ingredients in a medium bowl & mix well.

    Mexican Ketchup Relish

     

    Ingredients:

    1 cup Tomato Ketchup

    ½ cup Sweet Relish

    1 tbsp Apple Cider Vinegar

    1½ tsp Cumin Ground

    ¼ cup Fresh Cilantro Leaves

    2 tbsp Whole Grain Mustard

     

    Directions:

    Combine ingredients in a medium bowl & mix well.

    Sweet & Sour Sauce

     

    Ingredients:

    2 whole Red Roasted Bell Pepper, jarred or homemade

    2 cloves White Garlic Clove

    ½ cup Slivered Almonds, preferably toasted

    2 tbsp Sherry Vinegar

    2 tsp Smoked Paprika

    2 tbsp Canned Tomato Paste without salt

    1 tsp Kosher Salt

    1 pinch Crushed Red Pepper

    ¼ cup Olive Oil

     

    Directions:

    1. Add all ingredients to a blender or food processor.

    2. Blend/pulse a few times until combined. Season to taste.

    Yogurt Dip

     

    Ingredients:

    2 tbsp Granulated Sugar

    2 tbsp Apple Cider Vinegar

    ½ cup Tomato Ketchup

    1 tbsp Soy Sauce

    1 tsp Ground Garlic

     

    Directions:

    Combine ingredients in a medium bowl & mix well

    Romesco Sauce

     

    Ingredients:

    1 cup Plain Greek Yogurt

    3 tbsp Fresh Chives Minced

    3 tbsp Fresh Italian Parsley Chopped

    1 pinch Kosher Salt

    1 pinch Black Ground Peppercorn

     

    Directions:

    Combine ingredients in a medium bowl & mix well.
