Enjoy a flavorful rotisserie pork loin from home any day of the week, rain or shine, with the Philips Smoke-less Indoor Grill Rotisserie Attachment. Add some fruity mango salsa for a sweet pairing with the Philips Multi Chopper.
Ingredients
- For the pork:
- 1 (4- to 4-1/2-pound) boneless pork loin
- 12 medium garlic cloves
- 1/3 cup freshly squeezed orange juice (from about 1 medium orange)
- 2 tablespoons freshly squeezed lime juice (from about 2 medium limes)
- 2 tablespoons olive oil
- 2 tablespoons dried oregano
- 2 tablespoons kosher salt
- 1 tablespoon plus 1 teaspoon ground cumin
- 1 teaspoon freshly ground black pepper
- For the vegetables:
- 4 medium red bell peppers, cored, seeded, and halved
- 2 medium white onions, quartered
- 1 tablespoon olive oil
- Kosher salt
- Freshly ground black pepper
- Mango salsa:
- 3 ripe mangos, Pealed and quartered
- 1 medium red bell pepper, cored and quartered
- 1/2 a red onion cut in 1/2
- 1/4 cup packed fresh cilantro leaves, chopped
- 1 large lime, juiced (about 1/4 cup lime juice)
- 1/8 to 1/4 teaspoon salt, to taste
Instructions
- 1. Place beef roast and onions in a large resealable bag.
- 2. In a small bowl, combine the wine, oil, garlic, salt, pepper, rosemary, thyme leaves, and sage as a marinade.
- 3. Pour the marinade mixture over top of the beef roast and seal the bag. Refrigerate the roast for up to one day.
- 4. Preheat the grill to high heat. Remove the roast from the marinade, pat it dry then rub the horse radish all over the roast.
- 5. Place the roast on the rotisserie spit, making sure to get it as balanced as you can. Secure it tightly and place it on grill over a high heat.
- 6. Roast for about 50 min on high, or until the roast is 250°F, let it rest for 10 min then remove.
- 7. Pour 2 cups of the marinade into a saucepan. Bring it to a boil, reduce the heat to medium, and simmer for 3 to 4 minutes, stirring often. Remove it from the heat and add the butter. Baste the roast with the basting mixture every 20 minutes during the cooking time.
- 8. Remove the roast to a platter and slice thin against the grain. Serve the roast beef with your favorite traditional sides, such as baked or mashed potatoes and grilled vegetables.
- Mango Salsa:
- 1. In The Phillips Chopper, combine the prepared mango, bell pepper, onion, and cilantro then chop so the ingredients combines to make a salsa.
- 2. Drizzle with the juice of one lime and mix well. Season to taste with salt.
- 3. For best flavor, let the salsa rest for 10 minutes or longer.
