Winter soup ideas: Delicious holiday soups

When it’s cold outside, there’s nothing more welcoming than a warm and hearty holiday soup bowl. In addition to flexing your soup-making skills around the Christmas and Thanksgiving holidays, why not try making a New Year’s Eve soup? Whatever the event, here are some hearty winter soups to break out during the holidays.

This curried combo is a real wintry winner. The spices and root vegetables harmonize beautifully, warming you through from your head to your toes. It’s an easy-to-prepare soup that not only tastes delicious but fits perfectly into a festive menu with its creamy consistency and festive layering of spices:

Ingredients:

1 tbsp. olive oil

2 ½ cups of carrots

2 ½ cups of celeriac

1/3 cup peeled and chunked potato

1/3 cup chopped onions

1/4 cup peeled and minced garlic cloves

3 cups vegetable stock

Pepper & salt, to taste

2 tsp. curry powder

1 tsp. ground cumin

1 tsp. ground coriander

1 small piece of peeled and chopped ginger

½ cup crème fraîche or coconut milk

Directions:

To achieve maximum flavor, you’ll first need to gently warm your spices, onion and garlic together in a pan with the olive oil.

Once the onions are soft, add the carrots, celeriac and potato, mixing all the ingredients together. Cook for around 10 minutes, before adding all 3 cups of vegetable stock.

Simmer for around a quarter of an hour, or until all the vegetables are nicely softened.

Now it’s time to purée your soup using a blender. Blend until it reaches a consistency that you’re happy with.

Remember to fold in your crème fraîche or coconut milk for a velvety smooth finish.

Chicken pot pie is hearty and warming and perfect for when you have large gatherings with family and friends. While this works well as a New Year’s Eve soup or one of your soups for Thanksgiving, it’s also one to bear in mind throughout the whole of winter.

Ingredients:

1 tbsp. olive oil

2 ½ cups low-sodium chicken broth

1 peeled and chopped onion

2 medium-sized peeled and diced potatoes

1 (10.75 oz.) can of 98% fat-free condensed cream of chicken soup

1 cup cooked chicken, chopped

1 cup frozen mixed vegetables, thawed

½ tsp. dried thyme

2 tbsp. cranberry jelly

4 cups water

Directions:

Add potatoes to a large pan of water and bring to a boil. Cook until soft, strain and leave to the side until later.

Heat the olive oil in a warm pan and add the frozen vegetables, onions and dried thyme. Cook until soft.

Add the cooked chicken and cream of chicken soup. Cook the mixture over a low heat for 10 to 15 minutes. Season with salt and pepper.

Either blend the ingredients together in a blender or serve just as it is. Enjoy your chunky soup alongside your potatoes.

Pumpkin is a great base for hearty winter soups. Forget the pumpkin pie: you can keep a sense of tradition while doing something new by trying out pumpkin soups for Thanksgiving or as special New Year’s Eve soups. Use this recipe for pumpkin and chorizo soup and its winter flavors to spice up either a cold November evening or a festive end-of-year party.

Ingredients:

2 cup pumpkin

1 cup chorizo

2 garlic cloves peeled and crushed

1 peeled and chopped carrot

1 peeled and chopped onion

½ cup chickpeas (drained and rinsed)

½ red chili pepper without seeds

1 vegetable bouillon cube

¼ cup heavy cream

Toasted pumpkin seeds

Parsley to garnish

Directions:

In a pan, warm the olive oil, onion, garlic, chili pepper and chorizo for around 5 minutes. Add the chopped carrot and continuously stir the mixture.

After dissolving your vegetable cube in hot water, add the stock bit by bit to the pan. Season the soup, reducing the heat to a simmer for around a half hour.

Add the pumpkin and cook for another quarter hour.

Finally, transfer to a blender. When the soup reaches a smooth consistency, heat through once more with some parsley folded through.

Tip: Save yourself more time to enjoy the winter festivities by using a soup maker with six different settings. It’s the only Soup Maker that heats and blends soup – all in one.

If you’re not too tired of pumpkin after Thanksgiving, this works just as well as a Christmas soup. Make it festive by leaving out the chorizo – instead, season the soup with leeks and maybe some crème fraîche!
