    Spinach Leek and Cannellini Soup

    This healthy, meatless vegetable soup recipe is simple and easy to make in your Philips Soup Maker!

    • 1 3/4 cups leeks, white & light green part only, cleaned, cut into 1/2-inch pieces
    • 1 cup onions, chopped
    • 1 (15.5 ounces) can cannellini beans, drained and rinsed
    • 3 cups low-sodium vegetable broth
    • Salt and pepper to taste
    • 2 cups packed baby spinach


    • 1. Place all ingredients except for spinach into the Soup Maker. Stir ingredients, close lid, select chunky soup program, and then start.
    • 2. When soup is ready, open lid and stir in the spinach. Let wilt for 30 seconds before serving.
    • Tip: Add 1 cup diced tomatoes for an added savory flavor.
    • This recipe was made using the Philips Soup Maker (HR2204/70).
